Turkey Fried Rice

Here's a great leftover turkey recipe that uses some different flavors than the usual Thanksgiving fare.  You can use leftover chicken as well and I often make this the day after we bring home one of those grocery store roasted chickens.

Ingredients

2 cups chopped or pulled cooked turkey or chicken
4 cups cooked brown rice or any leftover rice that you might have
2 eggs
1 cup green peas frozen or fresh
1 medium onion diced
8 oz. mushrooms
1 T light soy sauce or more if you prefer
1 tsp sesame seed oil

Optional
1 or 2 cups of any leftover veggies that you might have.  Corn, carrots, broccoli or greens have all worked very well for me.
1 cup of chopped celery or a cup of bean sprouts
Garlic and ginger to taste

Methods/steps

  1. In a 12" nonstick skillet or large wok cook the onions, mushrooms and any other raw vegetables for a couple of minutes.  Add any garlic and ginger.  Add the Turkey, any leftover veggies and peas and cook just until warm.  Turn everything out into a large serving bowl.
  2. In 1 T of oil cook the rice and stir until it starts to brown.  Then make a hole in the middle of the rice and add the eggs.  Lets them sit for a minute and then stir them around and mix into the rice.  Add the other cooked ingredients back to the pan along with the soy sauce and sesame seed oil.  Stir until everything is heated through and serve.
